Medu Vada Sandwich
Ingredients

Talod Medu Vada Mix

  • Water – 1½ cups (approx.)
  • Oil – for deep frying
  • Thick coconut chutney – ½ cup
  • Onion tomato chutney – ½ cup
  • Fried cashew nuts – 2 tbsp
  • Fried curry leaves – 1 tbsp
  • Fried green chillies – 1 tbsp
  • Sambar – for serving

Method

  1. In a mixing bowl, add Talod Medu Vada Mix and gradually add water. Mix well to form a smooth batter. The batter should be neither too thick nor too thin.
  2. Cover and let the batter rest for 10 minutes.
  3. Heat oil in a deep pan on medium flame for frying.
  4. Wet your hands with water so the batter does not stick. Take a portion of batter in your hand and make a hole in the center using a wet finger to shape the vada.
  5. Gently slide the shaped vada into hot oil and deep fry until golden brown and crisp.
  6. Remove the fried vada onto an absorbent paper. Repeat the process with remaining batter.
  7. Serve hot Medu Vada with sambar and chutney.
  8. To make Medu Vada Sandwich, cut a medu vada into half horizontally.
  9. Spread thick coconut chutney on one side and onion tomato chutney on the other side.
  10. Add fried cashew nuts, fried curry leaves and fried green chillies for crunch and flavor.
  11. Cover partially with the top half so the filling remains visible and serve immediately.
