Method
- In a mixing bowl, add Talod Medu Vada Mix and gradually add water. Mix well to form a smooth batter. The batter should be neither too thick nor too thin.
- Cover and let the batter rest for 10 minutes.
- Heat oil in a deep pan on medium flame for frying.
- Wet your hands with water so the batter does not stick. Take a portion of batter in your hand and make a hole in the center using a wet finger to shape the vada.
- Gently slide the shaped vada into hot oil and deep fry until golden brown and crisp.
- Remove the fried vada onto an absorbent paper. Repeat the process with remaining batter.
- Serve hot Medu Vada with sambar and chutney.
- To make Medu Vada Sandwich, cut a medu vada into half horizontally.
- Spread thick coconut chutney on one side and onion tomato chutney on the other side.
- Add fried cashew nuts, fried curry leaves and fried green chillies for crunch and flavor.
- Cover partially with the top half so the filling remains visible and serve immediately.
